A couple of weeks ago I decided that I wanted to bake some cupcakes and I thought why not make a blog about it. I really like to bake and I like to experiment with different flavors and toppings etc. So I am going to tell how you make 15 red velvet chocolate chip cherry cupcakes!
- red velvet baking mix
- two eggs
- 80ml vegetable oil
- 160 ml water
- 100gr of pure chocolate
- 4 tbs of red food colouring
- 4 tbs of kirschwasser
- 50 gr of pure chocolate
- 4 tbs of red food colouring
- 6/8 tbs of powdered sugar
First how to make the cupcakes. Pre-heat the over on 175°C. When I baked the cupcakes I used a red velvet baking mix from the brand FunCakes. But you can also make it from scratch if you would like that. For the baking mix, you needed two eggs, 80 ml of vegetable oil and 160 ml of water. You put it all together in a bowl and you mix it for 6 till 8 minutes.
After that you need to chop your chocolate into chunks. I used a baking chocolate, but a normal tablet of chocolate will be fine.
When you have cut the chocolate in chunks you at them to the cake mixture. After that you put 4 tablespoons of kirschwasser into the mixture. Because you bake the kirschwasser with the mixture in the oven, the alcohol will go out of it and all you will be left with is a slight undertone of cherry in the cupcakes. If you want the cherry taste to come out more, you need to put more kirschwasser in it. After you have put the chocolate and kirschawasser into the bowl with the mixture, you mix it again until everything is well
Then you put the mixture into cupcake tins. After that you put the cupcakes into the oven on 175°C for about 30 til 40 minutes.
When the cupcakes are done you need to let them cool down a bit in the over, otherwise they can just plump in. When they are cooled a bit, you get them out of the over and let them cool down further.
When your cupcakes are fully cooled down, you can start on the topping. First off you put 6 till 8 tablespoons of powdered sugar in a little bowl. Then you ad about four tablespoons of food colouring. Then you mix it with a fork until all the powdered sugar is mix with the food colouring. the texture has to be a bit more fluid than syrup, but not to fluid, because then it won’t stay on the cupcake. When that is done you are going to meld 50 grams of
chocolate. While you melting your chocolate, you drizzle the glaze onto the cupcakes. I did it with strikes over al the cupcakes at ones. Which result is little lines over the cupcakes. With the glazure I did it with a spoon. After that you have the melted chocolate and you do exactly the same only then with a fork. Drizzle it on, over all the cupcakes. I swipe the spoon/fork fast from left to right to create the thin lines. When you have your topping on, you let the topping get hard and after that your cupcakes are ready to eat.
